Sweet Matzah Balls Instructions

Coarsely crumble the matzos by hand and place them in a bowl with cold water. Let them soak briefly but do not allow them to become saturated with water. Drain the matzos and squeeze them slightly.

Separate the egg whites and yolks. Beat the egg whites with the sugar and salt until stiff. Whisk the egg yolks, wash the raisins in hot water, and let them drain in a strainer. Combine the egg yolks, raisins, and chopped almonds with the soaked matzahs. Finally, fold in the stiff egg whites gently with dough scraper.

Heat the margarine in a big frying pan and turn the heat down to medium. For every sweet matzo ball you make, place 2-3 tablespoons of batter in the pan and flatten it slightly. Fry for about 3 minutes on each side using a spatula for flipping. Continue until all the batter has been used up. If necessary, add more margarine to the pan. Beware: sweet matzo balls have the tendency to burn quickly!

Sprinkle the fried sweet matzo balls with confectioner’s sugar and serve warm!
